YT-22593: Migrate TString to std::string in yt/yt/client/complex_types
Migrate the field-name plumbing in yson_format_conversion to std::string,
removing now-redundant TString casts and using heterogeneous lookups. The
Converted_ buffer is left as TString since it backs a TStringOutput.
